Referred to as "Echalion Cuisse de Poulet du Poitou" or "Leg of the Chicken Shallot" in France, Zebrune Shallot is a stunning heirloom variety resembling bananas. Gourmet chefs adore these glossy, pink-brown shallots for their mild, sweet flavor and pale pink flesh.

Their long, easily peeled shape and high sugar content make them ideal for caramelization. Shallots, as opposed to onions, have thinner layers and lose their pungency more quickly when cooked; they nevertheless maintain their crunch and a subtle, deep flavor. They taste stronger and have less bite when uncooked.

Shallots are great pickled, paired with fish and poultry, roasted whole in tarte tatins and curries, caramelized with steaks, and chopped in soffritos and vinaigrettes.
