Florence Fennel (Foeniculum vulgare var. Azoricum) is a perennial herb that resembles celery and has the aroma and taste of anise but is sweeter. Seeds from fennel are used to flavor many things including Italian sausage.
The bulbs from fennel can be eaten as a vegetable whether it be steamed, stewed, or consumed raw.
I do not have an indoor garden so I am waiting until spring to plant. I will try planting closer to Feb or March in small pods watering with spray bottle, and slowly introduce the plants to outdoor conditions.
